Mango Rice

My this post is dedicated to my friend " Pooja", who is an excellent cook, and make amazingly delicious food. Mango Rice is a one of the dishes which I tried at her place, when I was visiting her. It is one of the frequently made dish of rice in every household in South India. People of South India starts making it, as soon as raw mango is available in Markets.

Raw Mango has lots of health benefits. 
  1. It is sour in taste, and is generally green in color. 
  2. The center of the fruit has a single seed, which is oblong and flat. 
  3. The raw mango is highly appreciated for its nutritional value. They are excellent source of Vitamin C.  
  4. Raw mangoes are also good source of Vitamin B complex, that are beneficial to maintain good health. 
  5. Due to the presence of vitamin C, they are highly beneficial in strengthening immune system. It helps in throwing away from all waste products from the body.

There are few more recipes of raw Mango, which is very popular in India. 1 of them, is a popular refreshing sweet and sour drink, made in summer. And 1 of the most famous side dish made from Raw Mango is a Mango Pickle. The Recipes of these dishes will be following up soon.

Here, is a recipe of Mango Rice for you to try - 
 
Ingredients - 
  1. White Basmati Rice - 2 cups
  2. Salt to taste
  3. Sugar- 1tsp
  4. Turmeric Powder - 1 tsp
  5. Cooking Oil - 1tbsp
  6. Mustard Seeds - 1 tsp
  7. Hing - 1 tsp
  8. Raw Mango - 1 (Grated)
  9. Green Chillies - 4-5
  10. Curry Leaves - 8-10 leaves
  11. Channa Dal - 1 handful
  12. Peanuts - 1/2 cup (roasted)
Directions - 
  • Boil Rice in enough water. When done, drain out the water, and keep it aside open to cool down.
  • In a pan, heat oil, add mustard seeds, curry leaves, green chillies, channa dal, close the lid and let mustard seeds crackle. 
  • Add salt, hing, sugar and turmeric powder, and stir.
  • Add grated raw mango, mix and cover it and cook on medium flame for 5 minutes.
  • Close the flame.
  • Add cooked rice and mix properly.
  • Add Peanuts, mix and serve hot.

Sago cooked for Fasting (Sabudana khichdi for Vrati)

Navratri is one of those festivals in India, which is celebrated by about 80 % of the citizen. In this festival, many worshipers, do fasting for first and eighth day of the festival. Some do it for all 9 days, and eat proper food and grains on the 10th day. And in many families, they do not eat and cook Garlic and Onions for the 9 days. I even knew some people, who do fasting for the whole day, and eat complete food including grain, one time at a day mostly after sunset. Some people only eats fruits and some dishes on these 9 days, which are made of sago (sabudana), Makhana, potatoes, etc.

Here, is one of the recipe of Sabudana cooked with potatoes and peanuts. It's filling as well as give enough nutrition for the meal.

Ingredients for 2 people-
  1. Sago (Sabudana) - 3 Handful
  2. Rock Salt (sendha namak) to taste                                  
  3. Potatoes - 1 (diced- small)
  4. Green Chilli - 2 (slited)
  5. Peanuts - 1 handful
  6. Cooking Oil - 1 tbsp
Directions -
  • Soak Sago for 2 hours.
  • In a pan, add cooking oil and fry peanuts.. Take them out..
  • In a same pan, add cumin seeds, slited chilli and then add diced potatoes.
  • Fry it for a while till the potatoes are almost cooked.
  • Add Peanuts, mix them so that the peanuts are evenly spread.
 
  • Drain the water of Sago and add Sago to the pan, fry them for another 5 minutes at high flame.
  • Serve it hot.

White Cream Spinach Pasta

It was Friday evening, and I went for a grocery shopping. It was a sudden plan, so I was not prepared as usual. Generally, when we have to go out for any reason, I prepare dinner in advance, as I prefer my family to eat at home, as much as possible. Eating at home is always different from eating outside, as food prepared at home is much more healthy and nutritious.

Now, this evening I was not prepared, and I didn't even wanted to eat anything out. So, was planning what to make which can be quick, delicious and easy to make. We went with 1 of our family friends. Our friends told us, they will cook something different and it will be healthy and will be ready in 18-20 minutes. I was not sure, but thought of giving it a try.

By the time, I arranged my groceries they brought a bowl filled with "White Cream Spinach Pasta". And believe me it was so delicious, I couldn't resist of making it again on Saturday Morning. So, here is the recipe for you guys to try-

Ingredients-
  1. Pasta - 1 bowl
  2. Spinach- 2 bowls (chopped)
  3. Heavy Cream - 1/2 bowl
  4. Milk - 3/4 bowl
  5. Kastori Methi - 1tbsp (crushed)
  6. All Purpose Flour - 1tbsp
  7. Oil- 1tbsp


Directions - 


  • Boil Pasta for 12-15 minutes. Until it has turn soft, drain the water and leave it in the strainer for extra water to drain.
  • Heat pan and add All Purpose flour, fry for 30 seconds and add milk, stir and see no lumps are formed.
  • When all the lumps are dissolved, add heavy cream and boil on high flame. Keep on stirring.
  • After 2-3 minutes, add salt, black pepper powder according to your taste, and stir.
  • Add Spinach and stir and cook it for 5 minutes, uncovered on medium flame.
  • Add boiled Pasta, and mix and let it get cooked for another 3-4 minutes. 
  • Sprinkle Kastori Methi and stir. 
  • Cover it for 5-7 minutes, and let it set.
  • Now, serve.
