Spinach- Peas Stew (Mutter-Saag)



Ingredients-


  1. Spinach- 1 bunch (washed and chopped)
  2. Peas- 1 Handful (Washed)
  3. Salt- 1 Pinch
  4. Black Pepper Powder- 1/2 tsp
  5. Garlic - 2-3 (minced)
  6. Cooking Oil- 1tsp



Directions-
  •  In a heated pan, with 1 tsp of oil, add chopped spinach, salt to taste and a black pepper powder. Let it cook on medium flame for 10 minutes.
  • Add peas, stir it and let it cook for another 5 minutes, covered.
  • On a high flame, keep frying until all water evaporates.

Dahi Wada (Fried Black Gram Balls Dipped in Yogurt)

Ingredients for 4-6 Dahi -wada-

  1. Urad Dal (Split Black Gram) - 1 Big Cup
  2. Salt to taste
  3. Green Pepper- 1 (minced)
  4. Yogurt ( 1cup)
  5. Black Pepper Powder - 1 tsp (to sprinkle)
  6. Red Chilli Powder- 1tsp (to sprinkle)
  7. Oil- 1 cup (for frying)
Directions-
  • Soal Urad Dal for 30 minutes in hot water.
  • Drain the water and again clean it with cold water for 2-3 times, and drain all water.
  • Blend it in a blender with 1/2 cup of water.
  • Keep it aside in a closed container in a warm temperature for 8 hours.

  • After 8 hours, add salt according to your taste and green Pepper, mix it.
  • Heat Oil in a frying Pan, drop the 1tbsp of batter in a oil and at a medium temperature, fry it on either side till it turns brown in color.

  • Take it out from Oil, and dip it warm water for 15 minutes.
  • Take it out from water and press it big spoons, to take out the excess water from the balls.
  • In another bowl, beat the yogurt with 1/4 cup of water, add salt, dip all fried balls  and keep it aside for an hour.

  • Serve it cold or at room temperature. Before serving, sprinkle some Black Pepper Powder. And if you want you can also add Some tamarind Chutney.

Methi Baingain (Fenugreek Brinjal)

Brinjals, also known as Eggplant in many countries, is very good for our health. Check out some of the health Benefits of Eggplant-

Ingredients-
  1.  Fresh Fenugreek (methi) Leaves- 1 Bunches (chopped)
  2. Brinjal- 6
  3. Salt to taste
  4. Red Chilli Powder - 1 tsp
  5. Amchur Powder - 1/2 tsp
  6. Oil - 2 tbsp
  7. Mustard Seeds - 1/2 tsp
  8. Curry leaves - 8-10
  9. Green Chilli - 1 chopped
  10. Onion- 1/2 (big-chopped)
  11. Ginger-Garlic Paste- 1 tsp
  12. Tomato- 1/2 (big, chopped)
  13.  Turmeric Powder- 1 tsp
  14. Red Chilli Powder - 1/2 tsp
  15. Coriander Powder- 1tsp
  16. Cumin Powder- 1tsp
  17. Garam Masala powder - 1tsp
  18. Cilantro (Dhania patta) Leaves- 1/2 bunch (chopped)

Directions - 
  • Slit the brinjals lengthways into four keeping the stem intact. 
  • Rub the salt with one teaspoon of chilli powder and amchur into slit brinjals and set aside. 
  • Heat the oil in a pressure cooker and add the mustard seeds. When they begin to splutter, add the curry leaves, green chilli and onions and saute till the onions turn golden. 
  • Add the ginger-garlic paste and continue to saute for one minute. Stir in the chopped tomato, remaining chilli powder, cumin powder and coriander powder. 
  • Add the turmeric powder, garam masala powder and half a cup of water and bring the mixture to a boil. 
  • Add the brinjals, fenugreek leaves and salt. Seal the cooker with the lid and cook till the pressure is released once (one whistle). Lower heat and cook for two minutes. 
  • Take the cooker off the heat and remove the lid when the pressure has reduced. 
  • Garnish with coriander leaves and serve hot.

Naan

Ingredients for 2 people - 
  1. All Purpose Flour- 2 Big cups
  2. Cooking Oil- 1/4 cup ( to add in dough)
  3. Salt to taste
  4. Yogurt-  1 small cup
  5. Water as required
Directions - 
  • In a Bowl, add All purpose Flour with salt and yogurt with 1/2 cup of oil.
  • Mix it properly and  then add water little by little to make a tight dough.
  • Keep it aside in a warm temperature, for 12 hours.
  • Now, add 2 tsp of flour and again knead the dough properly for 2-3 minutes.
  • Divide the dough in equal 6 parts.
  • Make each part of dough in balls.
  • Roll each ball by a rolling pin.
  • Put it inside the Oven to cook for 2 minutes, take it out turn around and again cook it for 4-6 minutes, till it turns light brown on both sides.
  • Enjoy it hot with any curry you wish.

Choley-Bhaturey

Ingredients for 2 people - 
  1. All Purpose Flour- 2 Big cups
  2. Cooking Oil- 1/2 cup ( to add in dough) + 1 Cup (for frying)
  3. Salt to taste
  4. Mangrela- Ajwain- 1 tsp
  5. Yogurt-  1 cup
  6. Water as required
Directions - 
  • In a Bowl, add All purpose Flour with salt, ajwain- mangrela and yogurt with 1/2 cup of oil.
  • Mix it properly and  then add water little by little to make a tight dough.
  • Keep it aside in a warm temperature, for 12 hours.
  • Now, add 2 tsp of flour and again knead the dough properly for 2-3 minutes.
  • Divide the dough in equal 12 parts.
  • Make each part of dough in small balls.
  • Roll each ball by a rolling pin.
  • Heat rest of the Oil in a deep pan.
  • Fry the rolled tortilla on both sides, till it turns golden brown in color.
  • Enjoy it hot with Chloey, Yogurt, some chopped Onions and Green Chilli.

Bread Cutlet

Ingredients for 2 people-
Bread Cutlet
  1. Bread-4 slices
  2. Onion- 1/2 (chopped)
  3. Green Chilli- 2 (sliced)
  4. Potato- 2 big
  5. Salt to taste
  6. Cumin Powder - 1 tsp
  7. Aamchur Powder - 1 tsp
  8. Cilantro- 1/2 small cup (chopped)
  9. Semolina - 1 cup
  10. Oil- 1 cup + 1tsp
Directions -
  • Boil the potato, peel the shell and mash it.
  • In an open pan, add oil and heat it, add chopped onion, green chilli, cilantro and fry for 5-7 minutes, till the onions turn brown in color.
  • Add mash potato w/ salt and cumin powder and Aamchur powder.
  • Mix it properly on high flame.
  • In another bowl, take a bowl full of water.
  • Dip 1 slice of bread and squeeze the water out after 30 seconds.
  • Roll the Potato Mixture inside the bread and then dip the bread roll in the semolina bowl. So, that each and every inch is dipped properly with semolina.
  • In another Pan, heat the rest of oil and fry the roll till it turns golden Brown in color.
  • Enjoy it with Cilantro Chutney, Tamarind Chutney or Tomato Sauce.

PineApple Cake



Ingredients -
  1. All purpose flour - 2 cups
  2. Milk powder - 1 cup
  3. Baking powder - 1 tsp
  4. Sugar - 3/4 cup
  5. Cream - 1 cup
  6. Cooking oil - 1 cup
  7. Pineapple Pieces- 1cup
  8. Milk - 1cup
Directions -
  • In a big bowl, mix all purpose flour, milk powder and baking powder.
  • Blend the pieces of pineapple in a blender.
  • In another Bowl, mix sugar, cream, pineapple and cooking oil together, mix to make all the sugar crystals dissolved.
  • Slowly, transfer mixture of flour in mixture of sugar, stirring it continuously.
  • Add a cup of milk as required to make the batter thin, thin enough to make the spoon move easily in the batter.
  • In an oven cooking pan, Spray some oil with little of flour all over the pan.
  • Transfer the batter in a pan and leave it aside for 5 minutes.
  • Cook inside the oven for 30-35 minutes at 400 degree F temperature.
  • Take it out, insert a toothpick in the center of cake, it comes out clear, your cake is done, If no put it again for 5 minutes, and repeat the process.
  • Put the cake outside of oven and let it cool down.
  • Garnish it with cream and pineapple pieces.
  • Enjoy it at room temperature.
