Stuffed Bitter Melon ( Kerala Bharwan)

Ingredients- 

  1. Karela ( Bitter Melon)- 4 count
  2. Onion ( for filling) - 1/2 chopped
  3. Onion ( for gravy) - 1/4
  4. Garlic ( for gravy) - 2 cloves chopped
  5. Tomatos ( for filling) - 1 chopped
  6. Tomatos ( for gravy) - 1
  7. Turmeric Powder - 2tsp
  8. Red chilli Powder - 2 tsp
  9. Dhania Powder - 2 tsp
  10. Cumin Powder - 2 tsp
  11. Cumin seeds - 1 tsp
  12. salt to taste
  13. Water
  14. Oil - 1 Bowl
  15. Chat Powder - 1tsp
Directions -
Boiled karela
  • Take the Karela seeds out.
  • Boil the Karela in a pan for 20-25 minutes.
  • Take the Karela out of the pan.
  • Let it cool down for sometime.
Directions for filling -

Ready Filling
  • Take Oil in a dry pan.
  • Add in a heated Oil,  chopped Garlic, Onions, Tomatoes and Karela seeds.
  • Keep on stirring.
  • After stirring for 5 minutes, add salt, turmeric powder(1tsp), red chilli powder(1 tsp), Dhania Powder (1tsp), Cumin Powder( 1 tsp0 and chat masala.
  • Cover the lid and get it cooked for 15 minutes.
Directions for fried stuffed Karela-

Fried Stuffed Karela
  • Fill the Karela with this mixture.
  • Try to close these Karela, pushing by your palm.
  • Now, add Oil in an another pan and then, fry these Kerala individually.

Directions for Gravy -
  • Take the rest of onion, tomatoes and cumin seeds and grind them together.
  • Take the empty pan and add oil .
  • Add the content of mixer jar in a heated Oil.
  • Gravy
    Now, add salt, tumeric powder( 1tsp), Dhania ( coriander) powder( 1tsp), Red chill powder( 1tsp) and cumin powder.
  • Keep on frying it, until it turns brown.
  • Now, add water in the pan and make the mixture liquid.
  • Let it boil for 2-3 minutes.
  • Now, put the fired Karela in a serving dish.
  • Add this boiling content from the above of the Karela in a serving dish.
  • Sprinkle, some chopped cilantro.
  • Your Curry is ready.
  • Enjoy it with rice.
Ready Karela Bharwa

Vegetarian Chowmein

Ingredients

1. Spaghetti
2. Oil - 2 tablespoon
3. Salt to taste
4. Bell Pepper- 1/2 chopped
5. Carrot - 1/2 chopped
6. Onion - 1/2 chopped
7. Potato - 1 Small
8. Soya sauce - 2 tbs
9. Mustard sauce - 1 tbs
10. Tomato sauce - 2 tbs


Direction-

Boil Spaghetti, til the time it becomes soft and properly cooked. Drain all the water and keep it separately and let it cool down.
Take oil in a dry pan and heat it. Add all vegetables in the oil when heated, add salt and cover the pan.
When the vegetables are cooked, add tomato sauce, mustard sauce and soya sauce in it. Mix it well. Now, add spaghetti in the mixture , mix it well on high flame.

Ummmm, delicious Chowmein is ready to eat.

Aloo- Tikki Chat


Aloo- Tikki Chat

Ingredients-
  1. Potato -1 (medium)
  2. Onion - 1/2 (chopped)
  3. Green Chilli- 2
  4. Chic Peas - 2 handful
  5. Salt to taste
  6. Red chilli powder - 2 tsp
  7. Chat powder/ Aamchur powder - 1 tsp +1 tsp
  8. Oil - 1/2 bowl + 1/4 cup
  9. All Purpose flour- 2 handful
  10. Suzi - 1 handful
  11. Yogurt - 1/2 cup



Directions - 
Green Chick peas- Choley
  • Prepare Chic Peas according to the directions of Choley of Green Chick Peas
  • Take All Purpose flour in a bowl, mix with suzi, salt and oil (1/4 cup). Make a dough of warm water, keep the dough tight.
  • Roll it in small circles, commonly known as Papdi. Fry them in a separate pan.
  • In a different bowl, mash potato, add salt, red chilli powder with onion, green chilli. Mix them.

  • Divide in equal parts. Press them by palms and turn them in small flat balls.
  • Fry these balls (tikki).
  • Now, beat the Yogurt, add salt, red chilli powder(1 pinch) and aamchur powder (1pinch).
  • In a serving plate, Place 2 tikki  at some distance.
  • Add Choley of Green Chick Peas from top.
  • Sprinkle some chopped onion and green chillis.
  • Now, Sprinkle some salt, red chilli powder and aamchur powder, according to your taste.
  • Add beated Yogurt above it.
  • Break Papdi in 2 halves.
  • Serve it hot.

Kachori


Kachori

Ingredients-
  1. All Purpose flour - 2 cups
  2. Wheat flour - 1 cup
  3. Salt to taste
  4. Mangrela- ajwain- 1 tsp
  5. Oil- 1 + 1 cups





Directions -
All ingredients in flour

  • Mix All purpose flour, wheat flour, salt , mangrela- ajwain together.
  • Add 1/2 cup of oil in a flour mixture.

  • Slowly, add water and make a tight dough out of it.



Ready Dough

  • Take a small part of dough, make it like a small ball, roll it.
  • In a pan, heat all leftover oil for 5-7 minutes.



Small rolled dough


  • When heated, add rolled dough in a pan.
  • Press it with spatula from all sides.
  • Turn it over and cook it on another side.
  • Enjoy it hot with curry.

Carrot Cake

Ingredients-
  1. Cooking Oil/ Unsalted butter - 1 cup
  2. All Purpose flour - 2 1/2 cups
  3. Grated carrots- 2 Cups
  4. Baking powder- 1tsp
  5. Baking soda- 1tsp
  6. Ground Cinnamon - 1/4 tsp
  7. Ground nutmeg - 1/4 tsp
  8. Salt- 1/2 tsp
  9. Sugar-1 1/3 cups
  10. 3 large eggs
  11. Plain yogurt- 1 cup 
Directions - 
  • Mix the flour, baking powder, baking soda, spices, and salt in the bowl. Add this mixture to the carrots and toss until they are well-coated with the flour.

  • In the other bowl combine the sugar, Cooking Oil eggs, and yogurt.
  • Pour this mixture into the carrot mixture and stir until just combined. Pour into the cake pan and bake in the oven for 45 minutes. Reduce the heat to 325 degrees F and bake for another 20 minutes.

  • Remove the pan from the oven and allow cake to cool 15 minutes in the pan. After 15 minutes, turn the cake out onto a rack and allow cake to cool completely. Frost with cream cheese frosting after cake has cooled completely.

Black forest cake

Ingredients - 

  1. All Purpose flour - 2 cups
  2. Baking Powder- 1 tsp
  3. Baking Soda- 1tsp
  4. Salt - 1 tsp
  5. Eggs -2
  6. Sugar- 3/4 cup
  7. Chocolate Powder - 1 cup
  8. Cooking Oil - 1 cup
  9. Milk - 1tbsp 
  10. Lemon Juice - 1tsp
Directions- 
  • In a big bowl, mix all purpose flour, baking soda, salt and baking powder.
  • In another Bowl, mix sugar, cooking oil and chocolate powder together, mix to make all the sugar crystals dissolved.
  • Beat eggs in another container.
  • Add eggs to the sugar mixture and stir.
  • Slowly, transfer mixture of flour in mixture of sugar, stirring it continuously.
  • Mix milk and lemon juice to the batter.
  • In an oven cooking pan, Spray some oil all over the pan.
  • Transfer the batter in a pan.
  • Cook inside the oven for 30-35 minutes at 350 deg F.
  • Take it out, insert a toothpick in the center of cake, it comes out clear, your cake is done, If no put it again for 5 minutes, and repeat the process.
  • Put the cake outside of oven and let it cool down.
  • Garnish it with cream and cake sprinklers.
  • Enjoy it at room temperature or chilled.
 NOTE - If you don't eat egg, replace eggs with 1 cup of milk powder and 1 cup of cream. The recipe will remain same.





Banana Cake with almonds

Ingredients -
  1. Banana - 2 Ripe Bananas
  2. All Purpose flour - 2 cups
  3. Milk powder - 1 cup
  4. Sugar - 1 cup
  5. Baking powder - 1tsp
  6. Cooking Oil/ melted unsalted butter- 1cup
  7. Pinch of salt
  8. Whipped Cream- 1 cup
  9. Milk - 1tbsp
  10. Almonds and cashews - 1 cup
  11. Sprinklers to garnish
Directions - 







  • In a bowl, mix all purpose flour with baking powder, milk powder and salt.







  • In another bowl, mix oil with sugar, stir and dissolve all crystals of sugar.
  • Add mashed banana in the sugar mixture, mix and make banana completely dissolved.
  • Add flour mixture to oil mixture slowly and keep on stirring to mix  flour.
  • Add  milk and mix so that flour lumps are not formed .


 

  • Add flour mixture slowly to the sugar mixture, stir to make all lumps of flour disappear.





  • Add whole almonds and cashews.
  • Transfer the batter in a baking dish.
  • Bake it for 35-40 minutes at 350 degree F.
  • Check after 30 minutes.
  • Insert toothpick in the center on cake to see whether it's done or not.
  • Cook it for another 5 minutes. Repeat the process of toothpick.


 NOTE - If you don't eat egg, replace eggs with 1 cup of milk powder and 1 cup of cream. The recipe will remain same.









Blue Berry Muffin

Ingredients-
Blue Berry Muffin
  1. All Purpose flour - 2 cups
  2. Baking powder- 1tsp
  3. Baking Soda - 1tsp
  4. Milk powder - 1 cup
  5. Milk as required
  6. Cream - 1cup
  7. Cooking oil-  1 cup
  8. Blue berry - 1 cup ( washed and cleaned)
Directions - 
  • In a big bowl, mix all purpose flour, milk powder and baking powder.
  • In another Bowl, mix sugar, cream, and cooking oil together, mix to make all the sugar crystals dissolved.
  • Slowly, transfer mixture of flour in mixture of sugar, stirring it continuously.
  • Add a cup of milk as required to make the batter thin, thin enough to make the spoon move easily in the batter.
  • In an oven cooking pan, Spray some oil all over the pan.
  • Cut blueberry in halves.
  • Just before transferring the batter into a pan, add blue berry to the batter, stir slowly, as we don't want them to get mixed.
  • Transfer the batter in a pan.
  • Cook inside the oven for 30-35 minutes at 350 degree F temperature.
  • Take it out, insert a toothpick in the center of cake, it comes out clear, your cake is done, If no put it again for 5 minutes, and repeat the process.
  • Put the cake outside of oven and let it cool down.
  • Enjoy it at room temperature.
  • Can be easily served for 7 days.

Chocolate Chip cake

Ingredients -
  1. All purpose flour - 2 cups
  2. Sugar - 3/4 cup
  3. Milk powder - 1 cup
  4. Cream - 1 cup
  5. Cooking oil - 1 cup
  6. Baking powder - 1 tsp
  7. Baking Soda - 1tsp
  8. Chocolate chips - 1 cup
Directions -
  • In a big bowl, mix all purpose flour, milk powder and baking powder.
  • In another Bowl, mix sugar, cream, and cooking oil together, mix to make all the sugar crystals dissolved.
  • Slowly, transfer mixture of flour in mixture of sugar, stirring it continuously.
  • Add a cup of milk as required to make the batter thin, thin enough to make the spoon move easily in the batter.
  • In an oven cooking pan, Spray some oil all over the pan.
  • Just before transferring the batter into a pan, add chocolate chips to the batter, stir slowly, as we don't want them to get mixed.

Chocolate Cake

Chocolate is loved by most people. Few of my friends love to eat chocolates, when they are sad about something. Me too, love Chocolates.... But, daily consumption of Chocolates is not good, if one has a tendency of gaining weight. I learnt somewhere, if a person is hurt, or having any pain. The pain goes away with the intake of Chocolate. Do not know, whether it's true or not, but actually I think, a person forgets the pain to enjoy the goodness of Chocolates. My little one just started, eating Cakes.... This is my version of cake which is approved by my 3 year old.


Minimum Oil and replacing All Purpose Flour with Wheat flour, makes it a perfect healthy dessert... No guilt feeling....

Chocolate Cake
Ingredients - 
  1. Whole Wheat flour - 2 cups
  2. Milk Powder - 1 cup
  3. Baking Powder- 1 tsp
  4. Baking Soda- 1/4 tsp
  5. Sugar- 3/4 cup
  6. Chocolate Powder - 1 cup
  7. Cooking Oil - 1/2 cup
  8. Egg - 2
  9. Lemon Juice- 2tsp
  10. Milk as required
Directions - 



  • In a big bowl, mix whole wheat flour, milk powder and baking powder.

  • In another Bowl, mix sugar, egg (egg should be beated separately in another bowl and then should be added), cooking oil and chocolate powder together, mix to make all the sugar crystals dissolved.

  • Slowly, transfer mixture of flour in mixture of sugar, stirring it continuously.
  • Add a cup of milk as required to make the batter thin, thin enough to make the spoon move easily in the batter.

  • In an oven cooking pan, Spray some oil all over the pan, and sprinkle some flour all over the pan, and tap it upside down to remove the extra flour from the pan.
  • Transfer the batter in a pan.
  • Cook inside the oven for 30-35 minutes at 350 deg F.

  • Take it out, insert a toothpick in the center of cake, it comes out clear, your cake is done, If no put it again for 5 minutes, and repeat the process.
  • Put the cake outside of oven and let it cool down.
  • Garnish it with cream and cake sprinklers.

Almoke cake- Microwave cooking


Almond Cake

Ingredients - 
  1. All Purpose flour( Maida) - 2 cups
  2. Milk Powder - 1 cup
  3. Cream - 1/2 cup
  4. Sugar - 1 cup
  5. Baking powder - 1tsp
  6. Baking Soda - 1tsp
  7. Cooking Oil - 1 cup
  8. Almonds (whole)- 10-12 pieces
  9. Raisins - 1 handful




Directions - 
Maida, milk powder, Baking powder
  • In a bowl, add all purpose flour with milk powder and baking powder. stir it. 
  • In another bowl, add cooking oil, cream with sugar, mix it so that all sugar crystals disslove in oil.
  • Slowly, add mixture of flour to the mixture of sugar, stirring continuously.
  • Add a cup of milk as required and keep on beating the mixture, till all the lumps get disslove.
  • Keep it aside for 5 minutes. Add raisins.
  • Now, start beating it for another 5-7 minutes, You will notice as soon as you stop mixing there is a bubble formation in the batter, this means your batter is ready.
  • Put whole almonds from the top.
  • In a cooking bowl (in microwave), spray some oil and add batter in the bowl.
  • Put it inside the microwave and set time for 6 minutes.
  • When the time is over, take it out and insert a toothpick in the center of cake.
  • If it comes out clear, then your cake is ready. If not, then again put the stuff inside the microwave for 1 minute.
  • It will be done by this time.
  • Enjoy it when luke warm.
  • Can be used for another 5-7 days.
  • Enjoy .

Veg Pasta



Ingredients for 2 people - 
Veg Pasta
  1. Pasta -  3 handful
  2. garlic- 4 cloves ( minced)
  3. Onion - 1/2 (chopped)
  4. Carrot - 1 (chopped)
  5. Bell Pepper - 1/4 (chopped)
  6. Tomato paste/Pasta sauce (1 cup) - 1 tsp
  7. Salt to taste
  8. Red Chilli powder - 1/2 tsp
  9. Olive Oil - 1tsp





Directions -
Boiled Pasta


  • Boil pasta in a big pan, until it's totally cooked. Drain the water and keep it aside.



Vegetables fried
  • In an empty pan, add minced garlic, fry till it turn light brown, add chopped onion with all vegetables, on medium flame fry it for 5 minutes.
  • Add salt and tomato paste or pasta sauce with 1/2 cup of water and cook it covered for 15 minutes, till vegetables get cooked.
  • Add red chilli powder and olive oil with 1/2 cup of water and mix it thoroughly. 
Ready Pasta


  • Add boiled pasta and on high flame fry it for 5 minutes.
  • Remove the pan from the flame and added grated cheese and mix it all over.
  • Serve it hot.


Red kidney beans curry w/rice (Rajma-Chwal)

Rajma ( red beans stew)
Ingredients for 2 people - 
  1. Red Kidney Beans - 3 handful
  2. Onion - 1/4 ( sliced)
  3. Garlic - 3-4 cloves
  4. Ginger paste - 1 tsp
  5. Tomato Paste - 1 tsp
  6. Salt to taste
  7. Turmeric Powder - 1/2 tsp
  8. Coriander Powder - 1tsp
  9. Cumin Powder - 1/2 tsp
  10. Red chilli Powder - 1/2 tsp
  11. Garam Masala - 1/4 tsp
  12. Olive Oil - 1tsp
Boiled Rajma
Directions - 




  • In a pressure cooker, boil red kidney beans for 15 minutes.

Over night Soaked red beans

  • Grind cut garlic, onion and ginger paste together.
  • In a pan with out heating add the paste with Olive oil.
  • Fry on high flame for 10 minutes.
  • Add tomato paste with 1/2 cup of water and keep on frying, till the color of paste turns brown.
  • Add all spices with a cup of water and keep on stirring on high flame.
  • Add boiled beans to the liquid in a pan.
  • Add a glass of water and on medium flame, close the lid and cook it for 20 minutes.
  • Garnish it with chopped cilantro and tomatoes.
  • Paste of garlic, onion and tomatoes
  • Serve it hot with Jeera Rice

Rasogulla

Ingredients - 
Rasogulla
  1. Milk - 1/2 lt.
  2. Lemon Juice- 2tbsp
  3. Sugar - 1 cup
  4. Water as reqd.



Directions - 
Kneaded Dough
Divided in 10 equal parts
  • Boil the milk, add Lemon juice while boiling. Let the whey and fat cool down.
  • Separate the whey and fat using a strainer.
  • Put the fat in a soft cotton towel or paper towel, and hang it for 3-4 hours.
  • Transfer the fat in a bowl.
  • Knead the fat for 15-20 minutes until it turns too soft and starts getting hold together like a dough.
  • Divide the dough in equal parts.
  • Pressing by both hands, turn it in smooth balls.
  • Take sugar and water ( twice the amount of sugar), boil it for 5 minutes.
  • Add the balls in the water, cover the lid, reduce the flame to medium and let it get cooked for 20 minutes.
  • Open the lid, the ball should increase to the double size.
  • Close the flame and let the balls cool down.
  • Serve it cool.
